Cannabis-Infused Christmas Cookies Recipe

Decorating cookies in the winter is one of the easier things on a typical holiday list. They’re cheap, they bake in bulk, and it’s a fantastic way to spend quality time with your friends and family. And honestly, it’s not a holiday gathering without a dozen half-assed cut-out cookies drying themselves out on the table, getting picked up by the occasional dessert browser. This year, we’ve made the cannabis-infused Christmas cookie edibles game incredibly easy. The only cannabis part of this cookie is the icing. This is perfect for two reasons; one, so you can make a lot of cookies, and two, so you can safely go back for seconds without getting too stoned. Some could say that’s the icing on the cake. 

How to make Christmas cut-out cookies

We give you full permission to run to Target, buy some cookie cut-outs, and choose whatever cookie you want to make. We recommend a sugar cookie base for our recipe, but everything is fair game with cannabis-infused treats. 

You’ll need the following: 

  • Cookie sheet
  • Parchment paper
  • Christmas cookie cutouts
  • Cookie dough of your choice 

Instructions:

  1. Preheat your oven to 350 degrees.
  2. Place a sheet of parchment paper on a non-stick cookie sheet.
  3. Take your pre-made cookie dough and flatten it out, so it’s about 1 inch tall. 
  4. Use your cookie cut-out shapes to push into the cookie dough.
  5. Gently grab your cut-out cookie dough shapes and place them on the parchment paper.
  6. Bake for 10-14 minutes.
  7. Take out and let cool for 20-30 minutes.

How to make cannabis-infused icing

This is it, ya’ll. This is the hack that will let you have your cake and eat it too. Instead of having an entire cookie as an edible, you can control how much icing you put on your cookie and have the freedom to eat regular cookies as you go. 

First, you need to make your cannabis sugar. Like cannabutter, this will give your icing the kick it needs to send you into the fun zone. Grab your favorite cannabis tincture and add it to some granulated sugar

You’ll need the following:

  • 1 cup of cannabis tincture
  • 2 cups of granulated sugar

Instructions:

  1. Add the 2 cups of granulated sugar to a baking dish.
  2. Pour 1 cup of your cannabis tincture over the sugar
  3. Stir. 
  4. Cover with a cloth and let dry for 48 hours

Turning the cannabis sugar into icing

Once you’ve done the hard part of waiting 48 hours for your cannabis sugar to dry, you’re not on to the fun part. 

You’ll need the following:

  • A blender
  • 1 plastic bag
  • 2 cups of cornstarch
  • 3 cups of cannabis sugar
  • 2 tbsp of milk
  • 1 tsp of vanilla
  • 1 pinch of salt (optional)
  • Food coloring of choice 

Instructions:

  1. Pour your sugar into a blender and pulse on high until the sugar becomes a fine powder. It should look pretty close to powders of sugar. 
  2. Add 2 cups of cornstarch into the mixture and pulse again.
  3. Miix together 1½ cups of cannabis powdered sugar and 1½-2 tablespoons of water or milk.
  4. Add 1 teaspoon of vanilla.
  5. Add a pinch of salt.
  6. Add food coloring of choice.
  7. Put the mixture into the plastic bag and cut the tip so you can pipe easily.
  8. Decorate your cookie.
